Day Fifteen: Granola

I've been wanting to make granola all summer. You can't beat a bowl of fruit and yogurt with just a splash of crunch - it's the perfect summer breakfast.

This recipe comes from a librarian friend - combine your oats and nuts in one bowl, then a little oil, brown sugar, and syrup in another bowl. Combine the two, stirring to coat.


Then you spread it out on a jelly roll pan and cook for 2hrs and 15 minutes, stopping to stir every 15 minutes so that the oats are evenly toasted. For the last 15 minute stint, I added coconut. It is an easy recipe, but you have to have the time to dedicate to the task.


As an added bonus, Wyatt loves to roll his banana around on top of the granola until it is covered, then eat it. Everyone is enjoying this toasty goodness around our house.
